It's no longer a secret that Buah's pieces of fruit and vegetables are freeze-dried. But what exactly does freeze-dried mean? To understand why our fruit snacks are so healthy and aromatic, we will briefly explain the manufacturing process behind them.

Freeze-drying  (also called sublimation drying or lyophilization - but you don't have to remember) is an ingenious and ancient invention: By removing water, food can be kept longer. For example, in Mongolia, meat was freeze-dried 1000 years ago to supply soldiers with food on their long journey to Europe. Almost like ours - only that we provide you with fruity vitamins instead.

WHERE IS FREEZE DRYING USED EVERYWHERE?

Freeze drying not only used in the food industry. Still, it is also used, for example, in archeology (with damp wood or leather), in libraries for the restoration of documents damaged by water, for animal preparations, or for glossy papers and art prints to protect them from sticking. In the pharmaceutical industry, when drying drugs to stabilize active ingredients until immediately before use, extend shelf life or improve dosing accuracy. The freeze-drying process is beneficial for food because products can be made longer shelf-life. Valuable nutrients and vitamins, flavors, and colors that would usually disappear after a while are also retained. A good example is herbs, Spices, or instant coffee. Or just fruit.

HOW DOES THE FREEZE-DRYING PROCESS WORK?

Using the fruit, let's take a closer look at the freeze-drying process, using a pineapple as an example. Our pineapples are grown in Costa Rica. There it is only harvested when it has reached full maturity. Unfortunately, many fruits are harvested unripe and transported to Europe. The vitamins that are only produced during the ripening process are lost, and the intense fruit taste. That is why we attach excessive importance to harvesting only after the ripening process. Six hours after the harvest, the pineapple is then processed into small pieces by our local partners and frozen. It is done very lightly, with the help of large freeze-drying machines, so that vitamins and taste are much better preserved compared to conventional drying. A freeze dryer consists of two interconnected chambers. While one room first puts the pineapple in the frozen state, it is subjected to a negative pressure of six millibars in the other room. In this so-called vacuum chamber, a considerable amount of water is removed from the pineapple. What is exciting is that the frozen pineapple's moisture does not return to the liquid state during the entire process but instead evaporates or sublimates directly. WHAT HAPPENS AFTER FREEZE DRYING?

After our crispy fruit pieces left the freeze-drying machine, they are packaged and transported to Germany, where they are hand-filled into pretty buah packaging in cooperation with social workshops. Whether as a fruit smoothie, as a highlight in muesli or a salad, or as a pure snack for in between, nothing stands in the way of fruity and healthy enjoyment.
